Ingredients:
3 tbsp olive oil
1 medium onion
1 lb mild italian sausage
2tbsp minced garlic
6 c chicken broth
3 cubed large russet potatoes
2 c spinach
3/4 c heavy cream
Directions:
With the saute function in the instant pot, cook minced onion in the olive oil.
Brown sausage
Add minced garlic
Add chicken broth and potatoes.
Cook on Manual for 8 minutes
Add spinach & heavy cream
stir & serve warm
