Mom's Christmas Quiche





Ingredients
2 10 inch unbaked pie shells
6 bacon slices (crumbled)
5 eggs beaten lightly
2 1/2 c light cream
2 1/2 T minced onion
2 T melted butter
1 3/4 t. Worcestershire sauce
1 1/2 t. salt
1/4 t. nutmeg
pepper to taste
1 lb Swiss cheese
3/4 T parmesan cheese
1/2 lb mild cheddar cheese

Directions:
Fry bacon & crumble.  Saute Onions in butter.  Mix cream and beat the eggs.  Add the worchestershire sauce, salt, pepper and nutmeg together.  

Sprinkle half of the bacon and cheese in the bottom of the pie shell.  Add remainder to egg mixture.  Pour mixture into the pie shells.  Sprinkle the top of each with parmesan cheese.  Bake at 375 for 15 minutes.  Reduce heat to 325 then cook for 1 hour.

If desired, you can make the egg and cream mixture the day before then pour it into pie shells the morning you want to eat it and cook it.  It helps for an easy morning with little time in the kitchen.
